Should Eggs Be Refridgerated?

When i go to the supermarket and buy eggs they are generally stored on an unrefridgerated shelf.They have a best before date on them and an instruction to refridgerate after purchase.So does the use by date mean they are OK up to that date if not refridgerated or if they are bought in good time and refridgerated is this date extended and by how much? Also someone once told me that eggs should not be refridgerated as it spoils the flavour and affects the way they act in baking?

Egg Safety Tips
For egg safety - to stay healthy and avoid foodborne illness - USDA advises:

Buy clean uncracked eggs from a refrigerated case.

Buy eggs before the "Sell-By" or "EXP" (expiration) date on the carton.

Refrigerate eggs right away. Check that the refrigerator is set at 40°F or below.

Keep eggs in the carton and store then in the coldest part of the refrigerator - not on the door.

Raw shell eggs in the carton can stay in your refrigerator for three to five weeks from the purchase date.

Although the "Sell-By" date might pass during that time, the eggs are still safe to use. (The date is not required by federal law, but some states may require it.)

Don't keep raw or cooked eggs out of the refrigerator more than two hours.

Egg dishes such as deviled eggs or egg salad should be used within three to four days. Only if they come from Bernard Matthews farm. im not an expert but we usually refridgerate our eggs and they taste fine.

i don't know about the best before date question sorry I am a refrigeration engineer and work in some famous chefs kitchens, I also cook a lot myself, and the answer is definitely no, eggs should not be refrigerated.
The use by date is to stop people getting food poisoning.

By the way there is no 'd' in refrigerate, refrigerated, refrigerator or refrigeration, there is however in fridge. There are 2 schools of thought: one says that eggs are best kept in the fridge for freshness, and the other says that this is not necessary... I personally prefer to keep them in the fridge. I KEEP MINE IN THE FRIDGE, BUT YOU SHOULD REALY KEEP THEM AT ROOM TEMP,AS THEY DO TASTE BETTER AND ARE A LOT LIGHTER WHEN BAKING CAKES. you should definately refrigerate the eggs. i don't usually go by the date on the box to throw them away. but if you use them and they smell like ****. throw them away I just read the other day and an old reader disget that eggs should be refrigerated because they are more apt to give someone e-coli when not refridgerated. I keep mine in teh refridgerated. Refridgerate your eggs! They do go rotten!

The chef thing is that the yolk and the white are easier to seperate at room temp and that they also whip together better. Well way back when eggs were not refrigerated. They do keep for about 3 weeks out of the fridge but its best to put them in the refrigerator if you buy them that way. they can last a month longer when kept cold. Since the eggs are taken from a factor then stored ect. you are not getting the egg fresh from the chicken. I personally would not leave them out unless it was from my own chicken laying them since then I would know for sure how old they are. ( and I would store in a cool area) Salmonella is the biggest concern when it comes to eggs and keeping it in the refrigerator helps to stop it from growing. It will not kill the germ but help it stop growing. Heat is what kills it (165 degree's) just like when you cook chicken it should be 165 degrees before eating it. I would not buy eggs sitting on a shelf since they may have been refrigerated at one point then they got to warm and the germ really can grow or worse they could go rotten faster. Have you ever smelled a rotten egg? Its the worse smell. Hope this helped. Strictly yes, but they never hang around long enough in my house to really test the refrigeration principle. So put them in an egg basket, they will last easily for 2 weeks it is better not to put eggs in the fridge, as it has no purpose just use b4 the best b4 date, you will always know if a egg is off YES!!! for sure! rotted eggs smell horrid and you cant getthe smell out...so refrigerate please....save a nose! lol
I dont look at dates on products...if you do your wasting too much food...as long as they are kept cold..they last a long time...when i think i have them too long two three weeks then i hard boil them and use in potatoe salad, tuna or whatever, and the dog loves to play with a hard boiled egg out back...my mastiff used to eat three or four and would run around the yard with it first and then throw it to break it...then he ate shell and all...
whoever told you that about the spoiled taste of the egg when bake is a bit of a cracked egg about that too LOL
so em get home, get em cold and dont worry have fresh eggs... Nooooooooooooo.
