Answers: INGREDIENTS:
6 1/2 cups thinly sliced
potatoes
1/3 cup water
2 tablespoons dried minced
onion
2 teaspoons chicken bouillon
granules 1 tablespoon all-purpose flour
1/2 teaspoon salt
1/8 teaspoon garlic powder
3/4 cup milk
3/4 cup sour cream
1/2 cup shredded Cheddar
cheese

DIRECTIONS:
1. Place the potatoes, water, onion and bouillon in an ungreased microwave-safe 2-1/2-qt. dish. Cover and microwave on high for 12-14 minutes until potatoes are tender and bouillon is dissolved, stirring once.
2. In a small bowl, combine the flour, salt and garlic powder; stir in milk until smooth. Pour over potatoes. Microwave, uncovered, on high for 4 minutes or until thickened, stirring twice. Stir in sour cream; sprinkle with cheese. Cook 3 minutes longer or until cheese is melted. It sounds like you could just take a baking dish, spray it with some oil, or wipe it down with oil, and then slice the potatoes up in the size you want and then lay them in the dish, and pour melted velveeta cheese over it and then bake it in the dish at 350 farenheit for like 30-40 minutes (cover for 30) and then uncover for the last 10.
I have to add out of sheer concern for your or anyone's health that velveeta is not healthy in any way, shape, or form. Potatoes au gratin? This is a twice-baked potato casserole recipe, which seems similar to what you're asking for:

1 package frozen potatoes
3 cups cheddar cheese, shredded
8 oz sour cream
2 cans cream of potato soup

Grease or spray a 9x9 pan (VERY WELL). Preheat oven to 350. Mix all the ingredients together in a large mixing bowl, then pour into pan. Bake about 1 hour or until the top is pretty crispy.

You can double the recipe into a 9x13. take about 4 large potatoes.. peel and slice across into coins. boil for 10 min till not quite done.. will be a little firm.. drain.. set aside
meanwhile.. make a beshamel cream sauce..
2 Tablespoons butter
2 Tablespoons minced onion
2 Tablespoons all purpose flour
2 cups milk
1 cup grated velveta cheese
salt/pepper to taste

melt butter in sauce pan, toss in onion. fry up till clear (5 min) toss in flour and while stiring quickly, pour slowly in milk.. keep stiring as to not allow flour to clump.. This makes a gravy called beshamel sauce.. Keep stiring or whisking till all flour is incorporated into milk and it starts boiling and thickening.. after it is thickish.. add grated cheese.. stir till melted.. add a few dashes of black pepper and salt to your taste..
take a casserole dish and layer half the potato slices on bottom.. pour over half cream sauce.. place remaining potatoes over this.. pour remaining sauce over top.. You can at this point sprinkle additional cheese over top, or parmesan cheese, or leave alone... bake for 20-25 min at 350F till top is browned and bubbly...
mmm! yummy
PS: you can get creative and toss in chopped hotdogs in the middle layer while layering.. My kids love this.. But myself.. I dont care for the hotdogs..
also you can use the mexican flavor velvetta.. makes it more spicy.. I love Velveeta.
Parboil your potatoes in a chicken base(bouillon,or soup)
layer them in a baking dish
put Velveeta, and maybe another choice of cheese like asagio, mozzarella shredded,Parmesan, Cheddar shredded(depending on how much you like cheese)use them all
some heavy cream, season to taste and bake 350 oven about 30-45 minutes Cheesy Bacon Onion Potatoes
