Grilled fish - side dish ideas ?
For the 4th 2morrow, my husband is going 2 grill some type of sea fish. Would appreciate ideas as 2 what foods 2 go with it. Thanks!

INGREDIENTS
9 stalks steamed broccoli, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
2 cups half-and-half
1 (16 ounce) package processed American cheese
1 (16 ounce) package frozen French-fried onion rings, thawed
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Arrange broccoli in the bottom of a lightly greased 9x13 inch baking dish. In a medium bowl combine the soup, half-and-half and cheese. Mix until smooth and pour mixture evenly over broccoli. Top with onion rings.
Bake in the preheated oven for 45 minutes, or until golden and bubbly.

Wine Baked Potato:
INGREDIENTS
1 medium baking potato
1/2 medium onion, sliced
1/4 teaspoon butter
1/4 cup cooking sherry
DIRECTIONS
Preheat the oven to 450 degrees F (230 degrees C).
Make several cuts crosswise across the potato, about 1/2 inch apart and not quite all the way through. Place half of an onion slice, and a piece of butter into each cut. Place the potato onto a sheet of aluminum foil, and form a bowl. Pour the cooking wine over the potato, and fold the foil around to seal, turning the ends up like a boat to keep the wine from spilling out.
Place the potato onto a baking sheet, and bake for 50 to 60 minutes, depending on the size of the potato. When done, cut through foil, and top with your favorite potato toppings or just salt and pepper.
Good Luck and Have Fun! grilled vegtables, some brown rice. tomato/ cucumber salad. these are light ideas that would go well with fish rice. rocket, tomato and feta salad. nice bread. When I grill fish I make corn on the cob or steamed veggies.
My husband likes potatoes, so we usually have baked fries. We're doing jerk chicken with coconut rice and corn on the cob (which is excellent on the grill). I would probably do some grilled vegetables. Easiest way is to skewer them. I would stick with squash, zucchini, green and red peppers, and sweet vidilia onions. Rice Pilaf
3/4 C. Rice
1 Can chicken or veggie broth
1 onion diced
1 can mushroom pieces drained and chopped or
a handful of fresh mushrooms chopped
olive oil
2 bay leaves
Saute the onion and mushrooms in the olive oil. Add the rice and saute for a minute or two. Add the broth and bay leaves, bring to a boil. Cover, reduce heat, and cook for 20 minutes. Remove bay leaves before serving.
