I am looking for some good fruit recipes?

deserts, side dishes, salads -whatever that features raspberries, pineapple, strawberries, or peaches. Any good recipes out there?

Answers: a home made fresh fruit salad can be such a treat. yum.

just be careful with what you mix. too much banana and it gets mushy. too many orange pieces and it gets watery.

at this time of year, berries should dominate in a fruit salad. strawberries, blueberries and raspberries (add on top). Then crunchy apple slices with the skin for contrast. you are almost done. perhaps a few orange slices. a few pitted cherries (the cherries are so good this year). i personally like to drizzle a few drops of cointreau or kirsch (from washington state) on top, but in some places they arrest you for that. don't let is sit too long in a warm place. FRUIT CRUMBLE

Fruit:

1 lb. fruit, washed and prepared (any kind)
3 tbsp. sugar

Place fruit and sugar in a oven proof container.

Crumble:

1 3/4 c. (225 g) plain flour
1/2 c. (115 g) butter
1/2 c. (90 g) sugar
pinch of salt

Place crumble ingredients in the food processor. Blend to resemble bread crumbs. Sprinkle onto top of fruit.
Bake in 390 F (200 Celsius) oven for 1/2 hour or until brown on top.

Serve with cream or ice cream

FRUIT STUFFED FRENCH TOAST FOR 2

4 slices of your favorite bread
1/4 cup Neufchatel cheese or cream cheese
2 eggs
2 tbsp. milk
2 tsp. sugar
1/4 tsp. cinnamon
your favorite fruit thinly sliced
syrup
powdered sugar

1. Spread Neufchatel cheese (or cream cheese) on one side of each slice of bread
2. Place fruit on 2 of the slices of bread

3. Put the other 2 slices on top (you can use some extra Neufchatel cheese around the edges to keep the bread together if needed)

4. Mix milk, eggs, sugar and cinnamon in a bowl big enough to put the bread in

5. Can be cooked for 2 minutes in counter-top grill or in a skillet sprayed with cooking spray for 2 minutes on each side.

6. Put syrup and powdered sugar on top and serve!

Makes 2 servings, 1 sandwich each

The leftover egg mixture may be used to make cinnamon sugar scrambled eggs to go with your French toast. Strawberry Trifle

1 (12 oz.) pound cake
1/4 cup orange juice
2 small pkgs. frozen strawberries
2 tbsp. sugar
2 boxes vanilla pudding
1 (8 oz.) container whipped cream

Slice up pound cake and place slices on the bottom of a 9x13 inch dish. Pour orange juice over slices. Place strawberries on top. Sprinkle with the sugar. Prepare pudding according to directions on box. Fold 1 cup of the whipped cream into pudding. Spread mixture over strawberries. Top with the remaining whipped cream and refrigerate overnight before serving.

Strawberries and Fresh Mozarella with Mint Drizzle

3 cups Extra virgin olive oil
1 ounce Mint leaves
3 pounds, 12 ounces Stemmed and sliced Strawberries
2 ounces Sugar
6 pounds Fresh mozzarella cheese slices, 1/2 inch thick
1/4 cup Balsamic vinegar
As desired Mint sprigs

Mint Drizzle
3 cups Extra virgin olive oil
1 ounce Mint leaves

To make Mint Drizzle: In blender, combine olive oil and mint. Process until smooth. Cover and refrigerate. (Yield: about 3 cups) In bowl, combine strawberries and sugar; cover and set aside. (Yield: 12 cups)

For each serving, to order: Plate 4 ounces mozzarella, overlapping slices. Spoon 1/2 cup sugared strawberries around cheese. Drizzle 2 tablespoons Mint Drizzle and 1/2 teaspoon balsamic vinegar over cheese and strawberries. Garnish with mint sprigs, as desired.

Strawberry and Spinach Salad
Serving Size : 6

1/2 cup oil
2 tablespoons distilled vinegar -- white vinegar
2 tablespoons cider vinegar
2 tablespoons honey
1/4 teaspoon tabasco sauce
2 tablespoons poppy seeds -- toasted
2 pounds spinach -- bunches, washed, stems removed & chopped
2 heads belgian endive -- washed & chopped
1 cup strawberries, sliced -- stems removed, washed
1/2 pound mushroom -- cleaned and sliced
1 cup croutons
1/4 cup sliced almonds

In a small bowl combine the oil, white distilled vinegar, cider vinegar, honey, dry mustard, Tabasco Sauce, and poppy seed.

Whisk the ingredients together and allow it to sit at room temperature for 1 hour.

In a salad bowl combine the spinach, Belgian endive, sliced strawberries, chopped button mushrooms, croutons, and sliced almonds. Add your salad dressing and toss your salad. Let the salad sit for 5 minutes and serve. Strawberry Dumplings
Baked strawberry dumplings are similar to a cobbler, made with fresh strawberries and sweet dumpling dough.

INGREDIENTS:
* 1/3 cup sugar
* 2/3 cup water
* 1 teaspoon vanilla extract
* 1 cup sifted all-purpose flour
* 2 tablespoons sugar
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/4 cup butter
* 1/2 cup milk
* 1 pint (about 2 cups) strawberries, hulled and rinsed
* 1 tablespoon sugar

PREPARATION:
In a saucepan, combine 1/3 cup sugar and the water; bring to a boil. Reduce heat and simmer for 5 minutes. Stir in vanilla extract.

In a medium mixing bowl, sift together flour, the 2 tablespoons sugar, the baking powder, and salt.

Cut in butter with pastry blender or fork until mixture is crumbly. Add milk and stir just until dry ingredients are moistened. Place strawberries in a 1 1/2-quart casserole dish; pour hot sugar mixture over strawberries.

Immediately drop dough evenly in 8 to 10 spoonfuls over strawberries. Sprinkle dumplings with the remaining 1 tablespoon of sugar (and a little cinnamon, if desired). Bake at 450° for 25 to 30 minutes, or until dumplings are lightly browned. Serve hot with whipped topping or ice cream, if desired.
Makes 4 to 5 servings.

Peach Dumplings
Dumplings are spooned onto boiling peaches in syrup.

INGREDIENTS:
* 1 cup sugar
* 1 tablespoon butter
* 2 cups hot water
* 2 to 3 cups fresh sliced peaches, or frozen thawed
* 1 cup flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 tablespoon sugar, optional
* 1/2 milk or cream, more or less
* cinnamon sugar, optional

PREPARATION:
In a medium saucepan over medium heat, combine 1 cup sugar, butter, and hot water. Add peaches and bring to a boil. In a medium bowl, combine flour, baking powder, salt, and 1 tablespoon of sugar, if using; stir in milk or cream to form a stiff batter.

Drop large spoonfuls of batter onto the boiling fruit. Cover and cook for about 20 minutes. Spoon out dumplings and fruit into bowl. If desired, sprinkle with a little cinnamon sugar and serve with cream or ice cream. Serves 4 to 6.
