Anyone have a great basic brownie recipe?!

Question:

Anyone have a great basic brownie recipe?

Preferably one that uses cocoa rather than chocolate squares. Thanks!

Answers: Hi,
I have been making these since the late 80's. My friends often request them for their birthday gift.

Amy's Brownies

2 sticks salted butter, cut into pieces
2/3 cup good cocoa powder
2 cups granulated sugar
4 large eggs
2 tsp pure vanilla extract
1 cup sifted all purpose flour

Preheat oven to 350F.

9 x 13 pan, prepared with a little oil or cooking spray. If non-stick, go very light on the spray or it will be very difficult to spread the thick batter.

Melt butter in a large microwave safe mixing bowl. Add cocoa and blend until no lumps remain. Add sugar and mix well. Whisk in vanilla. Add eggs, one at a time and beat with a wire whisk 15 seconds between each addition. Sift flour and stir in with a spoon until the batter is well mixed. Do not overmix or the batter will be floury. Add batter to pan and spread flat to the corners. Bake 23-30 minutes. Check around the 23 minute mark, the center should be just done and still very moist. You don't want the center hard.

Cool completely on a wire rack, then cut.

p.s.
if you wish to control the salt content, use unsalted butter and 1/4 tsp -1/2 tsp salt. 1/2 cup butter or margarine, melted
1 cup sugar
1 teaspoon vanilla
2 eggs
1/2 cup flour
1/3 cup cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped nuts

Heat over to 350o.
Grease 9" square pan.
Stir butter, sugar and vanilla in large bowl.
Add eggs; beat well with spoon.
Combine flour, cocoa, baking powder and salt.
Add gradually to butter mixture, beating until well blended.
Stir in nuts if desired.
Spread into pan.
Bake 20-25 minutes or until brownies begin to pull away from the sides of the pan.
Cool.
Frost if desired. On the back of the "Baker's Brand" chocolate there is a really yummy, simple reicipe for brownies. Okay, this recipe will look a little weird to you at first, but I promise you it's well worth trying!!! http://vegweb.com/index.php?topic=6640.0... They're AMAZING and dairy and egg free. I know that's probably not a requirement to you, but it's fun to experiment and I'll bet you've never tried making vegan brownies before, so give it a shot! I promise you, that recipe is fantastic.
