What is the best way to make home made teriyaki sauce?
Answers: There are 3 basic ingredients: soy sauce, fresh ginger, and pineapple.
Soy sauce is made from fermented soy beans, and it's very salty. I like to use low sodium soy sauce. Fresh ginger cuts the taste of salt, and adds a nice flavor. Pineapple (especially Hawaiian) adds a sweet flavor.
Start with 1/2 cup of low sodium soy sauce. Peel one "finger" of a fresh ginger "hand". Cut 3 or 4 slices (not quite 1/4 inch thick), and lightly pound them out till they're thin. Add to the soy sauce. Taste after letting sit a few minutes. There shouldn't be an overwhelming salt taste. Add a little more ginger if it is too salty. Now add pineapple. You can use Dole canned pineapple. In fact, I recommend it. Dole is Hawaiian, and saves a lot of hassle peeling and cutting. Add maybe 1 and 1/2 Tbsp of the juice and a little of the pulp. Put in the fridge and let the flavors blend for a few hours.
That's it. You can use variations. Some crushed garlic is nice. A little diced onion. Your favorite fresh herbs. Whatever you like. INGREDIENTS:
1/2 cup soy sauce
1/2 cup *mirin (sweet rice wine) (soy sauce : mirin = 1:1)
2 tbsp sugar
PREPARATION:
Pour all ingredients in a pan. Stir the mixture well. Put the pan on low heat and simmer for a couple of minutes. Remove from the heat and cool the mixture. Store the sauce in a clean bottle in the fridge.
*You can substitute mirin with sake and sugar (sake:sugar = 3:1) ** Adjust the amount of sugar, depending on your preference. 1/4 cup tamari soy sauce (soy sauce)
1 cup water
fresh grated ginger (about 1 Tbs. or to your taste)
3 tablespoons brown sugar
1 minced garlic clove
2 tablespoons cornstarch
1/4 cup cold water
Combine 1 cup water,tamari,brown sugar and garlic and ginger in a saucepan and bring to a boil,stirring constantly.
Dissolve corn starch in 1/4 cup of cold water and add to sauce.
Stir constantly to allow the sauce to thicken.
If the sauce is too thick add a little water or tamari to thin.
