How do you fry chicken in a deep skillet? Please Help!?

Hey everyone, i am wanting to know how to fry chicken, i have done it before but i dunno i want it to be perfect.

My ingredients i usually use are

Eggs, Flour, Lawrys seasoning Salt, A little pepper and cooking oil.

Help!


Answers: Here is my favorite. Heart attack special.

Southern-Fried Chicken

1 3 lb chicken, cut up
1/3 cup butter milk
1/4 teaspoon freshly ground pepper
1/2 cup flour
1 teaspoon salt
2/3 cup lard or oil, lard will give the best flavor.

1. Combine flour, salt and pepper in a paper or plastic bag. Dip chicken in the buttermilk. Shake one or two pieces of chicken in bag to coat.

2. In a large deep frying pan, melt lard over medium-high heat to 375 degrees. Add chicken pieces and cook turning frequently until brown and crisp, 20 to 25 minutes. Drain on paler towels. I fry chicken but don't use flour or eggs. I mix a bowl of dry pancake mix (about 1/3 cup for 6 chicken breasts) that I have sprinkled garlic powder, onion salt, lemon pepper and paprika into. I don't measure the seasonings but probably it is 1/4 tsp each, maybe a 1/3 for the lemon pepper. Then I wash the chicken and leave it damp, coat it in the mixture and put it in the hot olive or canola oil. This way the coating is very, very thin, no heavy batter. Watch out for spattering when putting it in the pan! Everyone loves it. I have been cooking fried chicken since I was about 8 and the way I cook it is:
Criscoe depending if you are cooking a whole chicken > I use a large skillet
Put enough of it in to fill it half way and then add a stick of margarine. It needs to be hot before you put the chicken in.
I wash it good and then lay it out on a plate and season it with salt and pepper. Then I dredge it with self-rising flour and fry away. Just watch where you move the pieces because the bigger pieces (breasts, thighs) take longer to cook and the legs, wings take a lesser amount of time. Just move them around so that everything is done at about the same time. I have never used eggs on my fried chicken but I am from the South.
