What is a pork filet?!

What is a pork filet?

I have several recipes i want to make that call for pork filet. I cant find pork filet at any store. Is there something else that it is called. There seems to be plenty of pork loin and tenderloin, is this the same thing? If not what would be an acceptable substitute?


Answers: A pork fillet is the small muscle that is attached to the backbone of the pig [about 10 inches long ] on the opposite side of the fillet lies the pork loin. The pork fillet is the most tender part of the pig but can be somewhat dry if not cooked properly. I would have thought that a filet was just a piece of meat with no bone in it... unless someone knows better. you can use pork tenderloin, boneless pork chops, or a pork loin. all can be filets, as long as it doesn't contain bones. Pork fillets are boneless rib-end chops (rib-end cutlets).
