Im looking for a good homemade french fry recipe. I've tried before and in the oven they still tasts raw and if I actually fry them I can never seem to get them done right either. The prepackaged frozen are no problem either way. Thanks,


Answers: I always fry them twice. Once to "blanch" Them at about 325F, and second at 350F or so to finish , brown and crisp. It works for me! Try dipping in malt vinegar and remember to salt generously while really hot. cover the frying pan with a glass pan cover so u can see when they're the golden brown colour or the colour u want them.if u dont have a lgass cover thats alright,u can use another cover but u'll need to check the fries often.covering the pan shud ensure the inside is cooked.if u leave it uncovered it quickly turns brown but the inside isnt necessarily cooked
be sure to find a gr8 dip for ur fries.fresh cole slaw is a lovely side
hoped that helps :) you have to start with a good oil, like canola or peanut oil (not vegetable oil)..fill the with oil to a little more than 1/2 full...anything more your oil will over boil onto the stove and cause a fire

.then decide on how to cut your fries, obviously if you like thicker french fries they will take longer to cook...bring the oil to a slow boil, then make sure your home cut fries are (dry)....place a few in the pot as they bring down the temp. of the oil add some more, for the first couple of minutes you will need to use a tong or slotted spoon to seperate any of the fries that want to stick together..

I have NEVER covered the pot...doing so could cause it to overboil if you are not watching it 100% of the time.

Depending on the size/width of your french fries, you may have to make a tester and pull a few out after they have turned brown.

We love making french fries at home especially in the winter.

note the oil that you have cooked it in may be used several times if kept clean and free of those tiny littel burnt bits A great homemade FF recipe is for sweet potato fries. When you try them you will never go back to regular fries.

The key is oil temp.

With either sweet potato's or reg. potato's.

In a deep pot fill with oil about half way

Heat oil to 350 degrees

Cook potatoes for 5 to 10 minutes or until crisp...

to test take one potato out and check the doneness by breaking in half and checking inside.

when done place on paper towel and salt as soon as possible.

cut your potato's in strips fry in oil for about 8 minutes remove from oil and drain on paper towel then re-fry another 3 minutes {this will make them crispy} remove and drain again, sprinkle with seasoning salt
