Answers: Chinese Pepper Steak
1 tablespoon dry sherry or rice wine
3 tablespoons soy sauce
1 teaspoon sugar
2 teaspoons cornstarch
1 pound steak, trimmed of fat and sliced into thin strips
3 tablespoons peanut, canola or vegetable oil
1 teaspoon minced garlic
1 medium green bell pepper, cut into 1/2-inch strips
1 medium red bell pepper, cut into 1/2-inch strips
1 small onion, sliced into thin wedges, separated
3 thin slices peeled fresh ginger root
Place the sherry, soy sauce, sugar and cornstarch in a medium bowl; stir to combine. Add the steak strips and toss to coat. (Can be used immediately or refrigerated for several hours.)
Heat a large wok or skillet over high heat. Add 1 tablespoon of the oil and swirl to coat pan. Add the garlic, peppers and onions. Stir-fry until tender but still crisp, about 3 minutes. If you prefer the vegetables less crisp, reduce the heat slightly and stir-fry until desired doneness. Remove from pan and place in a bowl. Return the heat to high, add the remaining 2 tablespoons of oil and swirl as before. Add the ginger and stir-fry just a few seconds, then add the steak. Stir-fry until the meat is no longer pink, about 2 minutes. Discard the ginger. Return the peppers to the pan and cook an additional minute. Serve immediately.
Easy Fried Rice
3 cups cold, leftover rice
1/2-1 cup oleo
1 medium onion (chopped)
2 stalks celery (chopped)
2 carrots (diced)
1 cup frozen peas
3 eggs (beaten)
1/4-1/2 cup soy sauce (to taste)
pepper
Melt oleo in large non-stick skillet.
Add onion,celery,and carrots.
Saute until onions are transparent and carrots are crisp tender.
About 5 minutes.
Add peas and cook one minute more until peas are thawed.
Push veggies to one side of skillet.
Scramble eggs in empty side of skillet after the oleo spreads from veggies.
Mix eggs into veggies and season with pepper.
Add soy sauce.
Then slowly mix in rice by the spoonfull until all rice is added and all ingredients are well blended.
Fry until steamy hot stirring often. There's a packet of seasoning with directions and cooking suggestions in the ethnic foods aisle at the grocery store. It tastes as good as what I get at the Chinese Restaurant. There should be seasoning for pepper steak there as well, but I've never tried it. Oyster Sauce ewwwwww yuck
I haven't tried this recipe yet but it is about identical to my own ingredient wise. Fried rice I can never get to taste like the restaurant so I gave up trying, I put a link below that might help you with that =)
