Answers: No, don't use frozen diced potatoes. Frozen potatoes are to be sauteed or fried and are good for those cooking methods, but definitely not for potato salad. Just put unpeeled RED- skinned potatoes of similar size into a stockpot and boil until just done. Pour off the boiling water and let cool. Peeling is a breeze as the skins slip off easily with a peeler. Red-skinned potatoes are waxy and the best choice for salad because they keep their shape when cut into cubes or slices. Your taste buds will appreciate the extra effort. i would at leat nuke'em in the micro first....make sure there soft/cook wise...u dont want them to be hard! No I don't think so..... They will crumble and fall apart. Good Potato Salad needs fresh potatoes that are boiled to the proper point. The act of freezing the potatoes breaks up the cellular structure and this allows them to fall apart and crumble. I think that would be pretty nasty. Peel and boil your own, it will be much better. Nope, those potatoes are only partially cooked and meant to be fried. If you try to microwave them or boil them, they just get mushy and fall apart. If you don't want to start with fresh potatoes, get the canned ones and just cut them up right from the can.
