I would like to make yucca today but i dont know the recipe.. Can plz someone help me!!


Answers: Fried Yuca (Yuca Frita)

INGREDIENTS:
vegetable or peanut oil for frying
3 medium-size yuca, cooked, covered, over medium heat in salted water to cover until very tender, 25 to 30 minutes, and cut into 1/2-inch pieces salt to taste
1 recipe Mojo Criollo

1 In a large skillet over medium heat, heat 1 inch of oil to 375 F. or until a piece of yuca sizzles when it touches the oil, and fry the yuca until crisp on all sides, 5 to 6 minutes, turning with a slotted spoon. Fry only 5 or 6 pieces at a time so the oil temperature does not go down. Drain on a paper-towel-lined platter and keep warm in a 200 F. oven.
2 Transfer to a serving platter, sprinkle with salt, and serve with the mojo criollo on the side.

ingredients
2 to 2 1/2 lb fresh yuca (cassava), trimmed
About 7 cups vegetable oil
Kosher salt for sprinkling

Special equipment: a Y-shaped vegetable peeler; a deep-fat thermometer; a mandoline or other adjustable-blade slicer
preparation
Peel yuca with vegetable peeler, removing all waxy brown skin and pinkish layer underneath, then cut flesh crosswise into 3-inch sections.

Heat 1 1/2 inches oil in a 5-quart heavy pot over moderately high heat until it registers 375°F on thermometer.

While oil is heating, shave as many very thin lengthwise strips as possible from yuca sections with peeler or mandoline.

Fry yuca strips a handful at a time, stirring and turning with a slotted spoon, until golden, 30 to 45 seconds, transferring to paper towels to drain. Sprinkle immediately with kosher salt.

Cooks' note:
° Yuca chips can be made 3 days ahead and kept in an airtight container at room temperature.

-----------------------Yuca (Cassava) Pancakes

2 lbs yucca root, peeled, grated (cassava)
1/2 cup grated mild cheese or ricotta cheese or farmer cheese
1 teaspoon salt
3 tablespoons sugar (optional)
2 tablespoons butter, melted
1 tablespoon all-purpose flour
1 egg, beaten
1/4 cup corn oil or vegetable oil



1. Combine all ingredients except oil.
2. Heat the oil in a skillet over medium heat. Spoon in a couple of tablespoons batter and smooth into a 3-inch to 4-inch cake about 1/2-inch thick.
3. Brown on both sides, then drain on paper towels. Serve warm.

-----------------Yucca With Garlic Sauce (Yuca Con Mojo)

1 1/2 lbs yucca root, halved & in chunks
1 teaspoon salt
1 lime, juice of
6 garlic cloves, mashed
1 teaspoon salt
1/3 cup fresh lemon juice
1/2 cup olive oil
1 onion, chopped fine



1. Place yucca in saucepan; until yucca is just covered, add salt and lime juice and bring to a boil.
2. Reduce heat, cover and simmer until tender--about 30 minutes.
3. Drain and keep warm.
4. Mash garlic cloves into salt with mortar and pestle (or use food processor).
5. Add garlic, lemon juice, and onions to olive oil in a separate pan, heat until bubbling, then pour over yucca.
6. Toss yucca & sauce "lightly" cooking to saute over medium heat; till barely brown but not CRISP!
7. Serve.

------------------ Yuca Fries with Spiced Mayo

3/4 cup Real mayonnaise (not fat-free)
1 tsp. real lime juice
1 tsp. hot paprika
1/2 tsp. ground cumin
1/2 tsp. minced garlic
4 cups water
1 qt. cooking oil for frying.
2 lb. fresh yuca, scrubbed, peeled and cut into 2x1/2-inch pieces
Directions:
In a medium bowl, mix the mayonnaise, lime juice, garlic,paprika and the ground cumin; cover and chill. Bring water and salt to a boil in a 3 quart saucepan. Add the yuca and boil for 30 minutes or until tender. Drain and chill.

Heat the oil in a sauce pan over medium heat and fry the yuca in two batches for about five minutes or until crisp. Drain on paper towels. Add more salt if you like and serve with the now chilled spiced mayonnaise.

----------------Yuca con Mojo

1/2 cup chopped parsley
1 teaspoon chopped garlic
1 tablespoon lime juice
2 tablespoons of extra virgin olive oil
2 pound blanched Yuca, cut into steak fry size

Combine parsley, garlic, limejuice, and extra virgin olive oil and set aside. This is your mojo sauce. In a large pot with oil heated to at least 350 degrees, fry yuca until golden brown season with salt and pepper when hot. Serve yuca with the mojo sauce on top. 1/2 red bell pepper, cored, seeded, cut fine julienne

In a large saucepan, combine the yucca with enough water to cover by at least 2 inches and add the salt.
Bring the water to a boil over medium-high heat.
Reduce the heat to low, cover and simmer gently for 30 minutes, until the yucca is fork-tender but still intact.
Drain the yucca in a colander.
Heat the olive oil in a large skillet over medium heat.
Add the yucca and stir occasionally for 5 minutes, until slightly browned.
Add the garlic and lemon juice and toss to coat the vegetables evenly.
Cook for 2 minutes, just to release the aroma of the garlic, and add the cilantro and bell pepper julienne.
Toss again just to mix and transfer to a warm serving platter.

I saw this in the store the other day and couldn't figure out what it was without the help of the sign above it or how to prepare.
