I am a busy Mom, and on a budget I am looking for some easy dinner ideas that are good for a family of 3, that includes a toddler. I am interested in one skillet or easy bake recipes. Thanks everyone:)
Answers: Cheesy Chicken and Potato Casserole
INGREDIENTS
3 teaspoons vegetable oil
3 skinless, boneless chicken breasts
1 (5.5 ounce) package scalloped potato mix
4 potatoes, thinly sliced
2 cups shredded Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a medium skillet over medium high heat. Add chicken breasts and saute until tender. Meanwhile, prepare potatoes according to package directions, adding 1 cup (instead of 2/3 cup) of milk and sliced potatoes. When chicken is tender, remove from heat, let cool and shred. Add shredded chicken to potato mixture.
Fold chicken/potato mixture into a 9x13 inch baking dish. Cover and bake in the preheated oven for 25 to 35 minutes. Add cheese and bake for another 10 minutes.
Easy Cheap and Yummy Casserole
INGREDIENTS
1 (28 ounce) can baked beans
2 (16 ounce) packages hot dogs, sliced
1 (7.5 ounce) package corn bread mix
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C).
Pour the can of beans into a 9x13 inch baking dish so they cover the bottom. Arrange hot dog slices so they cover the beans as completely as possible. If too much juice seeps through to the cornbread, it will take longer to cook. Prepare cornbread mix according to package directions. Spread the batter evenly over the hot dog layer.
Bake for 35 to 40 minutes, or until cornbread is cooked through. A toothpick inserted into the center should come out clean.
Swiss Chicken Casserole
INGREDIENTS
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1/4 cup milk
1 (8 ounce) package dry bread stuffing mix
1/2 cup melted butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.
Bake 50 minutes, or until chicken is no longer pink and juices run clear. heres a website, its goood! i go on the websites to look for recipes:)

If you would like, add some whipped topping.But dont add one of too many fruits, it could make it an odd texture. ---- Macaroni and cheese is also a very nice option, simple, and could be made out of a box if short time, or not up to really cooking. ---- Sweetned Rice might make a nice little treat for your toddler... Add some creamer and milk, milk and sugar, or vanilla extract with some milk! ---- Stirfry, Cook some rice, bagged vegetables, or cook some of your families favorite vegetables to top the rice with. And you could also add shrimp and soy sauce.
There are many other foods you could create, depending on what your family likes. Try this one.It's yummy and easy to make.
CHICKEN CASSEROLE:
1 can cream of celery or mushroom soup
1 can water
1 can rice
chicken pieces (I use boneless,skinless pieces)4-6
onion soup mix for topping
Place soup,water and rice in casserole.
Place chicken on top.
On top of this add onion soup mix.
Cover with foil and do not remove or peak while baking.
Bake at 350 degrees for 50-60 minutes.
SPICY MACARONI CASSEROLE:
1 lb. bulk pork sausage
3/4 cup chopped celery
2 cans (7 1/2 oz.) tomato sauce
minced onion to taste
1/2 tsp basil
2 cups cooked elbow macaroni
Slices mozzarella or cheddar cheese
Brown sausage and pour off fat.
Add celery and onion and cook lightly
Add tomato sauce and basil.
Simmer 5 mins.
Place into casserole.
Alternate macaroni,meat and cheese in layers
Bake at 350 degrees for 30 mins.
Serves 4.
Hope these have helped and have fun trying them. My easy "go to" recipe is baked pasta. Super easy and tasty!
1 box of bowtie pasta
1 jar of spaghetti sauce
1 jar of pizza sauce
Parmesan cheese
mozzarella cheese
Cook pasta as directed on box and drain. Return to same large pot taken off heat.
Add spaghetti and pizza sauces. Mix together. Add a handful of mozzarella and Parmesan cheeses.
Place into a 13x9 baking dish.
Cover with 2 handfuls of mozzarella cheese and 1 handful of Parmesan cheese. Cover with foil and bake 20 in 350 degree oven. Uncover and bake for another 5-10 minutes.
Serve with green beans, salad, and garlic bread.
(You can also add cooked sausage or hamb. or both to the casserole. Saute onion and garlic with the meat.)
