Answers: I like to cook them the old southern way.
In fact just had a large pot today cooked with new potatoes. Wash,trim and snap beans place in a medium to large pot cover with water add 1 smoked ham hock. Cover pot but leave a small crack between pot and lid bring to a full boil lower heat let simmer for 45 min.Add salt to your taste.Add boiling water
if needed.But do not cover beans add 5 or 6 small new potatoes
simmer for about 30 more min. Then test for doneness. At this point the water should
have cooked down by 1/2.
This is the way the old timers cooked fresh green beans.

experence Boiling Method (my favorite) - In a large saucepan over medium-high heat, bring water to a gentle boil. Add trimmed green beans and cook, uncovered, 4 to 5 minutes or until crisp-tender (you may need to experiment with the degree of doneness you like). NOTE: You can also use a steamer basket.
REMEMBER: The beans will continue to cook after you take them out of the boiling water. Either take them out just before they are cooked the way you like or plunge them in ice water immediately to stop the cooking process.
Storage: Will keep for about 4 days, wrapped in plastic bag or wrap, refrigerated.

Remove beans and bring the water up to the boil.
Return beans to pot and bring to the boil.
By the time the water is boiling they should be ready.
Taste test for the degree of cooking you desire. Cover the beans with water and boil. Keep them cooking until you like them. I prefer mine a little crunchy still. I think maybe 5-7 minutes. Then drain the water out. Serve immediately or put on ice. If you serve them right away, I like to put butter, salt, pepper and a little garlic in the pot. Mix well and serve. From a health and nutrition point, you steam them. For half a pound, [one serving] steam them about 3 minutes, after the water comes to a boil. Or, my favorite way is to get out my favorite good ole black iron skillet, drop a coupla thick slices of lean bacon in it, get it sizzling and then put the green beans in. Add about 1/4 cup of water to the beans, season with salt 'n pepper, put a lid on and cook about 15 - 25 minutes.... whatever you prefer... and they're done. I like mine to be still a little crunchy when done. I roast them in a very hot oven.
Preheat oven to 475 deg F.
Snap the ends off the beans and de-string them.
Toss them with olive oil on a sheet pan (they should fit in a single layer) with a bit of salt and lots of chopped garlic.
Roast for 8-10 minutes in a 475 deg F oven (oven must be at temp when beans are put in).
