Answers: this is my receipe,


take 2 eggs, and whip them in a bowl. Add about 3/4 cup of white sugar and beat until smooth. Then add 1 stick of softened butter (use only real butter), and mix again until smooth. Add 1/2 teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon baking soda, as well as 1 tablespoon of vanilla. Mix again. Now add at least 3 very, very ripe bananas (the riper the sweeter flavor they have. If yours are not quite that ripe, you may want to add some additional sugar), and to keep it very moist - add about 2 heaping tablespoons of sour cream - just trust me on this one.

After mixing all those ingredients well, slowly spoon in flour - I usually do 1 cup at a time, until I get a nice thick consistancy - usually around 3 cups (but don't be afraid to leave out some or add more, if you think you need to). At this point, you can add some chopped walnuts if you like those.

Put the mixture in a non stick baking pan - I use a bread pan or a 9 x 11 pan, depending on my mood. Bake at 375 degrees til golden brown on top and a toothpick comes out clean - usually just under an hour. But, again, it could be less or more depending on your oven, so keep an eye on it.

look at this...i'm going to try...;-) Betty Crocker cook book has a good and easy recipe for banana nut bread. And if sugar is an issue, I've made it with the Splenda for baking, and you can't tell a difference. It is delicious. I like this recipe alot. Hope you like it too!
INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack. VERY BANANA BREAD

1/2 cup butter, room temperature
1 1/3 cup sugar
2 eggs
2 tsp. Myer's rum banana liquor
1/4 cup banana yogurt (Banilla) or buttermilk
1 tsp. banana, almond or vanilla extract
2 cups flour, sifted
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup ripe bananas, mashed
1 1/2 cup chopped pecans or walnuts

In the bowl of an electric mixer, cream together butter and sugar until it becomes light and fluffy. Add eggs, one at a time, beating after each addition. Continue to beat until fluffy and light.
Combine liquor and extracts. Sift the dry ingredients together and add half to batter. Add buttermilk or yogurt, extract and liquor, then remaining dry ingredients. Add mashed bananas and beat one minute longer.

Stir in chopped nuts.

Grease and flour several loaf pans.

Bake at 350F degrees until toothpick inserted in center comes out clean.
