i'm concerned about DESSERT...lol You have the makings for a batch of pineapple crepes -- fairly easy on the calories and a great dessert for the meal you're fixing tonight.

INGREDIENTS:

1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted
Pineapple, cut into cubes

DIRECTIONS

In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.

Fill with pineapple that you've lightly sauteed in a little butter. Serve hot. Make a pineapple cake possibly you could make a pineapple upside-down cake... try looking for a recipe online.

Or you could make pineapple pancakes, provided you have syrup handy. How about some pineapple pancakes You could make a pineapple upside down cake.' Please tell me you have sugar in your house then you can make a pineapple upside down cake!

INGREDENTS

2 OZ BUTTER

8 OZ TIN PINEAPPLE RINGS

6 OZ SELF-RAISING FLOUR

4 OZ BUTTER OR MARGARINE

6 OZ CASTER SUGAR

METHOD.

1.Grease an 7 inch round cake tin. Cream together the sugar and butter and spread over base of tin.

2. Arrange pineapple rings on top,

3. Place remaining igredients in a mixing bowl and combine with a electricmixer until fluffy.

4. Spoon mixture over pineapple rings. Cook on 180 oC or gas mark 4 for 35-45 minutes

5. Turn out cooked cake onto a serving dish and serve.

Also if you have ice cream in the freezer you can throw some of that on top when you serve, sugar fix should be sorted, lol Make a batter from the eggs and flour, dip the pineapple slices in it, and fry them in hot oil for pineapple fritters.

3 eggs
3 tbsp flour
1/2 tsp salt
got cardamom? vanilla? add a little.

Dry the pineapple slices with paper towels, dust with flour, then dip them in the batter. This method will help the batter stick to the juicy pineapple.

fry in a hot pan with 1/2 inch oil if you have it, or in just a little butter if you don't have much oil.

got powdered sugar? dust them with it.

I noticed, that none of these recipes is low-calorie. This recipe is no exception. But it's bound to be tasty, and pretty fast.

Just coat them as I mentioned and fry them in a little oil if you want to save calories. But add 1/2 C more flour and 1 tsp baking powder to the batter if you do that.

good luck with those munchies. Try having breakfast for dinner -- biscuits or pancakes (using the flour, skim milk, butter, and hopefully some baking soda or powder) with broiled or grilled pineapple and some scrambled or over-easy eggs on the side... ok, you can make an upside down pineapple cake. Not sure on the recipe, but basically make a typical butter cake mixture (flour, eggs, milk, butter). in a glass baking bowl, layer your pineapple (with its juice) on the bottom. Pineapple rings make a gd effect.... then place your butter cake mix ontop. Bake in oven then turn cake out once cool upside down so pineapple is ontop of cake. It makes a nice desert!

You could also make a batter out of the mixture and deep fry your pineapple, that's not the healthiest but its yummy!!! Beat two eggs in a big bowl with of a stand mixer or with an electric mixer. Beat in a cup of flour and a cup of milk. Mix until thoroughly blended. Spray a muffin tin with non stick spray (Pam). Preheat oven to 400. Put a pat of butter in the bottom of each cup in a muffin tin. Put the muffin tin in the oven. When the butter is melted and bubbly. Pour in batter to 1/4 of the tin. Spoon in some pineapple. Top with more batter to 3/4 full. Bake until risen really high and golden brown. Meanwhile reduce the leftover juice to a thicker consistency to pour over the hot popovers. OR

Cream a stick of butter with some sugar and a little salt. Mix in a cup or two of flour until mixture is crumbly. Press into a baking pan. Top with pineapple. Mix Two eggs, 1/3 cup of flour and pineapple juice from can and whatever else for a topping, sprinkle, spread or pour over top (depending on whatever the consistency is) and bake at 350 about 30 minutes until set and golden.

I noticed you have cake recipe suggestions - they are all missing Baking powder: cream 1/4 cup butter with 1/2 cup sugar, add 2 eggs, mix 1 cup flour with 2 tsp baking powder add to egg mixture alternately with 1 cup milk. Pour batter over pineapple rings and syrup. With the eggs flour and milk, you could easily make a fritter batter, but deep frying would kind of blow the diet...
Pineapple pancakes would be better.
Or instead, you could just dust the pineapple in flour, with lots of cinnamon! and brown with the tiniest amount of butter and a tiny bit of maple syrup or brown sugar. Just to satisfy your craving.
Or skip the added flour and fat and sprinkle a little soy sauce ginger and chili on the pineapple and throw it on the grill or under a broiler for a while. Maybe that will be enough to satisfy your craving :)
This is really good on top of a salad with some tuna and sesame dressing. A healthy lunch( or lite dinner) with a little touch of sweetness- the pineapple- almost like having dessert...

Sorry, not sure how hungry you really are... wanting just a snack or is it time for a meal?
Good luck!

PS. LOL, just posted and then read your updates... Try the "teriyaki" style pineapple or something similar! Go to the store, get some brown sugar & make a pineapple upside-down cake.........Yummy with a big glass of ice cold milk!! Sounds like it's time for pineapple pancakes!
