Best way to BBQ lobster tails?
On 4th Of July I BBQ'ed two lobster tails. They turned out pretty good, but I can't help but feel like it was pure luck. I took the tails raw, cut the shells along the top of the shell, and then put them on the grill for about 12-15 minutes. I had a HALE of a time take the shells apart to get to the meat.
I read online that before cooking you should cut them in half length wise, and BBQ them that way. When the meat seperates from the shell you know they're done. But is that the best way to cook them? Would LOVE some hot tips on how to BBQ lobster tails. After eating them with 3 glasses of reisling, it was the first time the wife did some of the things she did since before we had kids! Not sure if it was the wine or the lobster, but not wanting to take any chances!!!!!!

The power of the lobster tail bows to the power of the Reisling. Not much you can do there.
Grilling lobster tails adds flavor in terms of caramelization, but it is also intense heat and causes a tail to seize up.
If you think your wife like those, you need to send her into near-orgasmic ectasy. Courtesy of Thomas Keller (of the French Laundry restaurant in California), this is what you really want to do:
1) Do not boil lobsters directly, but pour boiling water over them. In a minute or two you can still separate them from their shell.
2) Take a number of sticks of butter. In a small pan/pot, boil one tablespoon of water (only takes a sec) and them drop in a slice of butter. Mix it in. Continue until you've done a bar or two. If you do it right, you'll have two bars of butter that are melted but don't separate. Keep them hot.
3) Separate the lobster meat and remove the tails. Drop in the butter. What you should end up with is a very gently heated, buttery lobster tail that is just to die for. If this won't get you a girlfriend or make your wife love you forever, nothing will.
