How do I make a balsamic glaze?!

How do I make a balsamic glaze?

Is it just as simple as reducing balsamic vinegar?


Answers:

I make this all the time for an excellent chicken dish I found.

Unless you're using a very expensive vinegar I would recommend adding a couple of teaspoons of sugar while reducing. This will slightly sweeten the glaze and also speed up the reduction process.

Also, never let it come to a full boil. Reducing vinegar is a delicate process and needs to be done at a very low tempurature and constant stirring. I can't tell you how many times I've gotten distracted and let the vinegar go too long.
