Looking for recipe for asparagus quiche?

But one without a pastry base. Can anyone advise?


Answers:

This is a versatile recipe for Savoury Impossible Pie that I have from an Australian friend. I've seen similar recipes on the web using Bisquick, but plain flour is more readily available and cheaper ;-)
Make the basic batter:
4 eggs, beaten
2 cups milk
1/3 cup melted butter
1/2 cup plain flour
Mix well, and add
drained chopped cooked or tinned asparagus
1 or 2 handfuls of grated cheese
Pour into a buttered 25cm/10"pie plate or 7"x 11" pan
Bake 200 oC (400 oF) c35-40'.
Variations: add to basic batter
Tinned tuna or salmon, finely chopped onion, parsley, cheese
OR
Crisply cooked bacon, tomato, sliced onions
OR
Cubed ham, thawed frozen peas, grated cheese
OR
Thawed frozen mixed veg, grated cheese
OR
Peeled prawns or crabmeat, finely sliced spring onions/shallots, grated cheese
This is a good recipe for using up small amounts of leftover cooked meat or veg.
