Is 1 cup of sugar per half gallon of figs a good amount for fig preserves (plus a lemon)?!


Question:

Is 1 cup of sugar per half gallon of figs a good amount for fig preserves (plus a lemon)?

Please do not give me links to recipes. I know how to use a search engine, unlike some people who ask things here.

I want opinions of cooks.


Answers:

My pectin box instructions say:

Fig - yield 8-8 oz jars

5 cups ground or crushed figs
1/2 cup water
1/2 cup lemon juice
7 1/2 cups sugar
1 package pectin

I've followd the instructions on the pectin box for plum, straweberry and apricot preserves. I've never tried fig, but if the others worked, I don't know why this one wouldn't. I hope this helps!
