Fresh Herbs & Veggies... Need to Use 'em ALL, but HOW???

I have fresh Basil, Thyme& Sage herbs. Fresh Eggplant & Spinach. My Protein choices are Salmon, Tilapia, Chicken Breast, or Beef Steaks.

I want to cook something with ALL of the Fresh ingrdients for sure. I'm open to all styles of Cuisine as I like to experiment.

I just want to make sure it will end up tasting delicious. Tonight I'm cooking for my boyfriend, Mom, Dad, Grandma and an Aunt..... so I want to be impressive...... HELP!!!


Answers:

For a great combo, fix your eggplant with a little basil, garlic, thyme, butter and lemon. Spinach should be fixed on it's own, no herbs, with just a little butter and salt to taste. If you'd like to use the sage with your chicken breast, just remember not to use too much of it since it's a fairly strong herb. If you brown the chicken breast in butter then make a light white wine sauce from the brown bits in the pan, a bit of sage could be tossed in the sauce to finish it off. Another way to use sage is to finely chop it and toss it into cooked corn (just the frozen kind), as an interesting touch. Hey, good luck!
