Whats something I can cook up for myself for dinner tonight? Its cold here tonight so a salad won't cut it!

One of my favorites is a piece of fish, trout, catfish, salmon, or a few shrimp. Grill the fish with a sprinkle of Cajun seasoning, light or heavy depending on your taste.
While the fish is grilling (5-15 min) cut a red pepper into strips - 1/4 inch wide and 2-3 inches long. Slice 3-4 fresh mushrooms. Heat 1 Tbls olive oil in a frying pan, add the red pepper strips and cook, stirring frequently for 3-4 min. Add the mushrooms and cook another 2-3 minutes. Add 2-3 cps of fresh baby spinach and sprinkle with about 1 tsp of Mrs Dash, Garlic and Herb or other variety that you prefer. Using a spatula turn the spinach to mix it with the pepper and mushrooms. Keep turning it, you don't want it sitting on the bottom of the fry pan very long. Spinach will cook super fast, I prefer it just barely warmed but still raw looking. This will happen within 1-2 minutes.
This is a fast, delicious and very healthy meal.
