Hey! All you cooks and or chefs.?
I have a recipe for a chocolate silk pie. It is a no cook refrigerater pie except for melting the unsweetened chocolate. It calls for 2 eggs but I don't like serving anything with raw eggs in it. Is there some way to alter this? Maybe by adding the eggs to the melting chocolate?
Answers:
I know of no replacement for eggs, and if you cook the eggs it will significantly alter the recipe.
Your reluctance to use eggs is understandable, since uncooked eggs occasionally carry salmonella, a dangerous food poison.
What is often overlooked is that the salmonella is usually present on the OUTSIDE of the eggshell, and makes its way to the uncooked portion of the egg when the egg is cracked.
If you need to use a raw egg in a recipe, I recommend quickly washing the outside of the egg in hot soapy water prior to breaking it. This should greatly reduce the already very small chance of salmonella poisoning.
Good luck.
