What's the difference between rolled oats and regular oatmeal?!

Question:

What's the difference between rolled oats and regular oatmeal?

Answers:

I am a former chef and one of the difference not described by the other, some oats depending on the method of processing, like Quick, Instant or here in Canada we have what is called large flake, are processed to cook faster, some in a minute and other up to 10-15 minutes and the Scottish and Irish oats which are steel cut not rolled in a machine flat, take up to 30-60 minutes of slow cooking.

As one respondant said sometimes it is just a labelling thing, it is best to read the directions it tells you how to prepare them, the long the cooking time the more nuttier the flavour and mre nutrients, as the more the processing the less food value is left.
