Can you share simple but good ideas for summer dinners that need a minimum of (or no!) cooking?

First things first: I CANNOT barbecue or grill! (No space, no tools, and no skill--though I'm a good cook otherwise.) I'm about to reach the end of my repertoire of shrimp salads, "fancy" cold sandwiches, and the like. The weather's hot, and I don't feel much like cooking (or eating), but I have a family and I still need to put a meal on the table. What do you like to make on the hottest
summer days that doesn't involve a barbecue but is actually tasty enough to be worth doing? Thanks in advance for your ideas!

It is 95 and steamy in DC today- uck. My family's favorite summer meal ony requires boiling spagetti- and makes the most out of the summer bounty!

Chop three ripe tomatoes, 1 cup basil, 1 container mozzarella cheese balls ( or fresh mozzarella, cut up), salt, pepper, olive oil, and balsalmic vinegar- let sit for at least 45 minutes and add hot cooked spagetti. Mix and serve with bread. This is a great healthy and easy summer meal!
