Baked Salmon with
Sour Cream Stuffing
Ingredients
4 to 6 pounds dressed salmon (fresh or frozen)
1-1/2 Tablespoons salt
2 Tablespoons melted fat or oil
Ingredients for Stuffing
3/4 cup chopped celery
1/2 cup chopped onion
1/4 cup fat, melted
1 teaspoon salt
1/2 cup sour cream
1/4 cup lemon, peeled and diced
1 Tablespoon lemon rind, grated
1 teaspoon paprika
1 quart dry bread crumbs
Cook celery and onion in fat until tender. Combine all stuffing ingredients and mix thoroughly. Thaw frozen salmon. Clean, wash, and dry fish; sprinkle inside and out with salt. Stuff fish loosely. Close opening with small skewers or toothpicks. Place fish in well-greased baking pan; brush with fat. Bake at 350 degrees for approximately 1 hour or until fish flakes easily when tested with a fork. Baste occasionally.
Serves: 6 to 8.

Chinese Noodle Cookies
Ingredients
One 12-ounce package Nestle's chocolate chips
One 12-ounce package Nestle's butterscotch chips
One 16-ounce package of Chinese noodles
In a double boiler, melt the chocolate chips and butterscotch chips in the same pan. Remove from heat. Gradually add Chinese noodles until covered with chocolate/butterscotch. Drop onto greased dish and refrigerate and/or freeze. Keep refrigerated and enjoy.

Golden Cheese and Ham Bake
Ingredients
5 slices soft bread, cut in 1/2-inch cubes
3/4 pound. grated longhorn cheese (about 3 cups)
6 eggs, slightly beaten
1/2 teaspoon dry mustard
2 cups milk
1/2 teaspoon salt
dash of cayenne pepper
dash of accent
1/2 cup chopped ham
1/4 cup grated onion
Spread bread cubes in greased 2-quart dish. Sprinkle with longhorn cheese. Combine remaining ingredients and pour over cheese/bread mixture. Cover with foil and. Refrigerate 8 hours or overnight. Uncover and bake for 46 minutes at 350 degrees.

Party Rolls
Ingredients
2 packages yeast
2 Tablespoons sugar
1 cup and 2 Tablespoons warm water
1/2 cup sugar
1/3 cup melted oleo
1 teaspoon salt
3 eggs, beaten
5 cups flour
Mix yeast, sugar, and water until dissolved. Combine with remaining ingredients, except flour. Gradually add flour. Knead lightly. Place in covered bowl and let rise for 2 hours. Punch down and let rise again until double in size. Roll out and cut to desired size. Let rise in buttered pans for 1/2 hour. Bake at 375 degrees for 10 to 15 minutes. Freezes well.
Makes: approximately 50 party-size rolls.

Crab Hors D'oeuvre
Ingredients
1 can frozen or canned crab, drained well
One 8-ounce package cream cheese
1-1/2 Tablespoons Worcestershire sauce
2/3 teaspoon lemon juice
1-1/2 Tablespoons mayonnaise
Minced onion (fresh or instant)
1/3 bottle Heinz chili sauce
Mix and spread on plate (can be done 1 or 2 days in advance and covered). Just before serving, spread chili sauce over mixture.
