Frying fresh salmon?

I'm not much of a cook but I am trying to cook more than the easy college type meals like pizza. I figure I'm not going to learn if I don't try and the best time to learn is by myself where I can laugh at my own mistakes and not force someone else to eat my not so good meals.

The most fish I have cooked was the frozen kind that you throw in the oven. I have tried baking salmon after marinating it in maple syrup which turned out really well and I was quite proud of myself. I've had salmon since then at my boyfriends parents. His Mom fried it that night and it was really good that way also. I'd like to try frying my salmon tonight but I'm not sure how to do it properly. My boyfriend had mentioned once before about dipping it in flour and frying it in a bit of oil? It was either for salmon or cod, I really can't remember.

Any help would be appreciated!

Salmon is the epitome of the fish, to bread, flour or batter it would be next to sacri-religious.

Most everyone gave you good suggestions except those that suggested the above atrocities. Sorry but they are obviously not gourmet cooks.

As you do not know anything about cooking, I am assuming because you saw it in a frying pan on top of the stove you assumed she was frying it. I would bet that she was probably poaching it. Seasoning salmon is a lot like gilding a lily. You do not want to add salt and pepper.. a little olive oil in the pan, omegas through and through.. a low flame until the oil is hot, don't let it smoke...gently place the fish in the oil, (if it is a fillet-skin side up) cook for a minute or two then turn..baste the top with butter, and when the butter has melted add a few teaspoons of lemon juice. (usually about 1/2 lemon squeezed over each piece of salmon) Cover and allow it to simmer in the lemon juice..add more if necessary.. cook slowly until it has turned a soft pink... to serve, slice lemon wedges on top and sprinkle with a very small amount of dill.

Fresh asperagus, and mashed potatoes will make a colorful service, and you needn't waste this on a single service, be brave and invite someone you want to impress.
