Calzone dilema - What toppings taste as good in a calzone as they do on a pizza?

I've recently started making pizza at home from scratch, and they're turning out great! My wife wants me to try calzones, but here's my dilema - I love the way pepperoni gets crispy on a pizza, the way the onions and peppers get slightly burnt on the edges, the way the mushrooms shrivel up from losing their moisture under the intense heat, the way the raw, crumbled sausage gets cooked to perfection on top of the pizza.

The problem is that NONE of these things will happen inside the calzone! So I guess what I'm looking for is ingredients that aren't being cheated by being put IN the calzone instead of ON the pizza.

Think "Chicago Style" my freind. Pre-cook the items you mention. Let them cool before making your calzone
