Answers:

HAMBURGER BUNS

2 c. milk
1/4 c. sugar
2 tsp. salt
2 egg whites
2 tbsp. oil
2 cakes fresh yeast
6 c. flour

Scald milk; add sugar, salt, and oil. Cool. Dissolve yeast in this, then add half the flour. You may use cake beater to beat this part, but finish by hand. Beat the whites until very stiff and stir into first mixture; add rest of flour to make a medium firm dough. Put out on floured board and work lightly a few minutes to make a smooth ball. Oil the dough and let rise in greased bowl until doubled, then put out on floured board and roll out about 1 1/2 inches thick.
Cut with large size biscuit cutter or a sharp can of size for hamburger buns. Place on oiled baking sheet. Let the buns rise again until light. Brush with pastry brush dipped in egg yolk mixed with 1 tablespoon milk. Bake in hot oven at 450 degrees F. When done, brush with oiled brush while they are warm.
