Please advise me of the correct way to cook an omlette?
I just can't seem to get it right!

Always cook eggs on a medium to medium low heat if you cook them slowly they get fluffy and taste much better. Simply whip your eggs(3) - add 1 T milk or water and a dash of salt and pepper - pour into a preheated and oiled (butter/cooking spray/ghee your choice) then leave uncovered and let cook until the edges begin to dry - at this point you may add your filling - cheese, mushrooms, peppers, ground meat, etc - then use your spatula to gently run completely around the egg - slowly wiggle the spatula under the entire egg and gently fold in half and readjust to center the now folded omelet - cover and let cook about 2-3 minutes uncover and test with a toothpick to make sure egg is completely cooked (you will only need this trick the first few times once you have succeeded a few times you will be able to tell by the look) remove to a plate and serve. Enjoy!
