Why does my sushi rice get hard???!

Why does my sushi rice get hard???

I have been making my own sushi lately, and i boil the rice and put the vinegar and sugar on it to make it sticky, roll it and put it in the fridge wrapped tight in saran wrap. but when i cut it and eat it the rice is hard and crunchy. I try leaving it out until it gets to be room temperature, but it's still hard. This has happened twice, and I know that I have not undercooked the rice.....help!!!!

you will have to warm up the rice. cover it with wet paper towel and microwave it. sure your rice was not undercooked? and then it will get hard once it gets cold. it's best to just make a fresh batch of rice. don't make alot for that day. i always have leftover rice. what i do, when i cook a fresh batch after it boils i add the left over and leave it there until completely done and it will be soft again.
