How can I tell when fish is freezer burned?


Answers:

Being a former chef, you will notice a whitish crusty look to the flesh of the fish, generally this is just on the surface, so you can defrost it when you cook it and trim off the affected area, we had this happen when I was working, stock was not resealed or the boxes were not sealed or closed right.

You do not need to sacrifice the either piece just trim it off, the best thing is if it is fresh fish to wrap it in saran wrap when you bring it home, frozen should be repacked in plastic bags and wrapped also.
