How can I make my chocolate chip cookies soft and fluffy?!

How can I make my chocolate chip cookies soft and fluffy?

They always turn flat and crispy when I take them out of the oven!


Answers:

Depending on your altitude, you will need to adjust your recipe. I l live in Colorado at 6,000 feet above sea leval and have to include an extra tablespoon of flour and 3 tablespoons extra of water.

Make sure to aerate your flour (put it thru a sifter). It allows more air and makes the batter fluffier. I also beat my eggs seperately, to get more air in them and add to the softness.

Perhaps reduce the amount of butter and replace with a tablespoon of sour cream. It hold in moisture, and with aerated flour and eggs, they come out soft and fluffy. Good luck!
