Question:

Does anyone have a quick, good recipe with...?

chicken, green peppers, tomatoes, potatoes. I want to try something different, I know alot of dishes & I really dont feel like following long cooking instructions from a website because they always add something that you don't have anyways. Besides the seasoning what can I prepare with those ingredients? Oh please do not give me any recipe that I have to put stuff in the oven- cause it dont work, so I just have a stove. Thanks

Hi, here's what I would do with the ingredients you have listed, assuming it's boneless skinless chicken.

1) Peel & dice your potatoes, place into pot and cover with water, add some salt & bring to a boil.
2) Meanwhile, dice the chicken, green peppers, and tomatoes into cubed pieces (roughly 1").
2) In large skillet, heat a couple Tbsp. of oil (olive or vegetable) over med-high heat.
3) Season chicken with garlic powder, onion powder, cumin, chili powder, oregano (if you have these, if not try and go with what you have, Italian seasonings would be good as well) and salt & pepper to taste.
4) Add chicken to skillet and turn to coat in oil, cook until browning on all sides. Add peppers and tomatoes, cover with lid, reduce heat and allow to simmer.
5) When potatoes are tender drain well (carefully reserving a bit of cooking water).
6) Remove lid and add potatoes back into the pan. Add a little reserved liquid at this point to "loosen" the mix if needed. Mix well and serve when all chicken is cooked through and peppers are tender when pierced.

**If you are using bone in chicken, just brown well in hot oil and let cook longer until all is done.

Hope it appeals to you, I am doing the best I can with what you have. If you have onion and fresh garlic try adding that, also a can of tomato sauce added during the peppers and tomato stage would be great.
