(Cheese & cream tarts)

200g puff pastry
3 eggs
twice the volume of the eggs in double cream
150g Swiss cheese
paprika to taste
1 pinch ground mace
salt & freshly ground black pepper
Pre-heat your oven to 400°F / 200°C
Roll the pastry out thinly. Prepare 12-16 tartlet cases, or a single larger tin to fit.
Blend the eggs and double cream. Add the grated cheese, the seasoning and the spice.
Line the tins or single tin with the pastry. Fill to two-thirds depth with the cheese & cream mixture. Bake for 8-10 mins (tartlets) or some 25-30 mins (single tart).
Unmold to a serviette covered platter and serve at once.
