Olive oil during the boiling phase keeps the foam down, thats it. (You should be adding salt during that step) Never ever ever rinse your pasta. Tossing with olive oil after you drain is a nice touch-if you like oily pasta- but you might want to reserve a little of the cooking liquid instead and use that to keep the pasta from sticking. And always under cook the pasta, never the time on the side of the box..
