My butcher sells very good quality QUAILS (Frozen but plump and succulent) Any GREAT recipie ideas out there?

Split to lay open and dust with seasoned flour. I like to use "Cavenders Greek Seasoning". Saute in a pan with extra virgin olive oil and butter. When cooked remove from pan and keep warm on paper towel. Put thin sliced and peeled apples in the same pan and saute. A little more butter may be added as needed. When apples start to soften add apple cider, brown sugar, ground cinnamon, pinch of nutmeg and ground clove. reduce while stiring. thicken to a glaze with cornstarch and water. Place over quail and serve over wild rice mix or rice pilaf. To give a real show in serving place a spoon of congac over the quail and light it at the table. 2 quail per person is the normal serving and is known as a Brace of fo quail.
