Question:

Cherry cheesecake recipe and help with types of soft cheese / cream to use...?

Looking for help, please - have never made cheesecake before and would like to make a cherry one, using digestive biscuites for the base. Have checked out in my receipe book for basic method and it says to use curd cheese and another says soft cheese? The thing is I don't know what they are!!!
I need help please (UK names) and was thinking of using marscapone cream cheese as I know this tastes good!
Any help / advisce would be most grateful - THANKS!

have checked out websites given by answerers and they say to use:
2x 8 oz packages cream cheese
but what exactly is this? there are so many types in the supermarket!

Answers:

Cream cheese is a very soft white cheese, pretty bland in flavor. Many people spread it on bagels. In the US it's sold mainly under the Philadelphia brand, and usually comes in flat 8 oz. "bricks." A similar texture and taste of cheese is Neufchatel, which is actually lower in fat, but slightly softer.
