This is not a 'creamy' style sauce...and I'm not exactly sure what you are looking for but you can certainly try this: A little olive oil and chopped shallot in a pan, add some white wine (2 splashes) and then the segments from half a grapefruit....give it a minute to simmer out the white wine and then add a few pats of butter. This sauce doesn't get thick but its nice and tangy and goes well spooned over any kind of fish, especially nice sturdy varieties such as swordfish.
