I'm diabetic. Can I used Splenda or some other sugar subtitute just like sugar is called for in a recipe?


Answers:

Splenda comes in a 1-1 replacement formula. The problem is it dries out really fast. I made macaroons for my roommate and they went stale at lightning speed. So make sure if you bake with it to cover it after to avoid drying.

If you use stevia then there is also a 1-1 replacement but I'm yet to try using it. I use stevia instead of sugar in most things that I want sweetened for myself, especially liquids, the key to stevia is finding the brand that doesn't have a bitter aftertaste and using very very little of it, it's something like 300 times sweeter than sugar, so it's easy to mess up. Again it comes in a 1-1 version but I haven't tried it yet.
