Grilling tips?!

Grilling tips?

Mom and I got a new grill and we haven't used it yet. I was wondering if anyone had any tips (Any tips at all!!) for grilling.
I love to cook but, I don't use much recipes. So any tips to cook the meat to perfection would be great. Thanks!!

It depends on your type of grill buddy. Charcoal? There's a ton of info for that. Gas? Even more!

First things, first. Buy Foil! you can use it to make tents over the food---to concentrate heat, you can wrap things up in it to put over the flames---to avoid charring; once it is cooked, put it on the platter and cover it in foil for 5 minutes to let the meat "rest." Then it will be juicer when you cut it.

Secondly, you do not want to cook with a big flame. It will sear the outside and the inside will be raw. Medium to Medium high will be just fine. For things like London Broil, or steaks, I go with 3-4 minutes per side for medium rare. Chicken with bones, put that in foil then cook like meat. Chicken without bones, less heat same time. Fish? DEFINETLY foil and keep a close eye on it. That is the most delicate of all the proteins as it were.

Lastly, try to avoid "off-the-shelf-marinades." They have way too much salt and sugar. There's easy rubs, marinades and sauces you can make yourself and they're fun to use. Rubs are spices that you rub on to the meat. Stab each side 20 times with a fork, then rub the spices on. Then grill. Same with marinades except, run them with some kosher/rock/sea salt first (avoid table salt!), then put them in a sealable bag and let them soak for a while.
