Answers:

HOMEMADE CORN DOGS

1 cup all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
2/3 cup cornmeal
2 tablespoons solid shortening (Crisco)
1 slightly beaten egg
3/4 cup milk
8 to 10 good-quality hot dogs
8 to 10 wooden skewers
Vegetable oil for frying

In a large bowl, sift together the flour, sugar, baking powder and salt. Stir in the cornmeal. Using a pastry blender or fork, cut in shortening.

Combine egg and milk and add to dry mixture.

Wipe hot dogs with a paper towel to dry and help the batter adhere to them

Insert skewers into one end of each hot dog, almost all the way to the other end.

Heat vegetable oil in a deep fryer to 350 to 375 degrees.

Pour batter into a large, tall glass. (If batter is too thick, add a little milk.) Dip hot dogs, one at a time, into the batter. Let excess drip off, then plunge into the heated oil. Cook 4 to 5 minutes or until batter is brown. You can cook as many at a time as your deep fryer will hold without crowding. Drain on paper towels.

NOTE: I suppose you could eliminate the sugar from the dry ingredients and substitute a tablespoon or so of honey, stirring it into the egg/milk mixture.
