How would you make a pot of irish stew?!

Question:

How would you make a pot of irish stew?

Answers:

I don't know where the other answers are coming from but none of them are offering proper irish stew as far as i'm concerned! It is simplicity itself, use any veg you like but in my house it's just meat, potato, carrot, swede, rosemary and thyme and stock water!
Brown the meat
Add the veg and herbs
Add the stock water
Add a bay leaf
Salt and pepper to taste
Cook slow and low for two hours
Your done! How simple is that?
The potato disintergrates a bit and thickens it all up and the flavour is simply delicious for such a simple dish, forget the rest and keep it simple. It's so easy, enjoy!
