I need something new....I'm pretty tired of broiling and poaching. Please share your favorite seafood recipies....type of fish used doesn't matter.

Problem guys....I don't have a grill. Looking for some really flavorful fish dishes that I can prepare indoors.

Use orange juice as the liquid for thick white fish like perch, cover dish with cling film and microwave. Or for blue fish (sardines, herrings, small mackerel), sprinkle with olive oil and oregano, bake, then squeeze on lemon juice after serving (otherwise, it will boil in the juice). My Japanese grandmother did fish like mackerel this way: bring c2 cups water, 1/2 cup soy sauce and 1 heaping Tbsp sugar to the boil, add gutted mackerel split in half lengthways (remove head as well), cook just 10' on one side, turn and leave to cook on other side while turning heat off. The classic Greek fish dish psari plaki or a la spetsiota uses thick white fillets, in a single layer in a baking dish, topped with a mixture of coarsely chopped tomato (or a tin of chopped tomatoes), oregano, white wine, 1 tsp sugar and s & p, sprinkled generously with bread crumbs, a good swirl of olive oil, baked in moderately hot oven 45' or until fish is cooked through. Sole fillets can be spread with a mixture of finely chopped herbs and spring onions, rolled up and held together with a toothpick, and microwaved a few minutes until just cooked through.
