Does anyone know how to make chicken in a garlic butter sauce?!

Does anyone know how to make chicken in a garlic butter sauce?

I'm thinking about making baked chicken with butter and lemon with capers. Would you just put the chicken, capers, butter, lemon slices in a foil and bake them? Or is there a "special trick" to this?

what i usually do is pan fry the chicken lightly then finish off in the oven. to make "lemon-butter" sauce:

1. chop up some garlic with koshar salt and turn into paste.
2. in a skillet, sweat the garlic paste with 1 c. of white wine and 3 tbsp butter and olive oil.
3. in a bowl, chop up 1 stick of butter and set in freezer.
4. once the sauce is simmered and garlic is cooked through, add the juice of 2 lemons (don't let seeds fall in)
5. cook until sauce reduces to 1/2 cup or so.
6. REMOVE from heat. put in frozen butter pieces one at a time. make sure the first one dissolves before adding the next one. you'll see your sauce start to thicken up. GO SLOW. if you go too fast the butter seperates and becomes greasy. if this happens, stop, add an ice cube and then start again.
7. spoon sauce over chicken and enjoy.

i'd suggest a bottle of south african savignon blanc or a sparkling chardonney (or even a glass of pearly bay celebration, a sparkling wine from south africa) with this dish.

other additions ot the sauce: you could use sweated white onions instead of garlic for the sauce, or toss in sun-dried tomatoes.
