Butterless-milkless-eggless Cake
2 cups brown sugar
2/3 cup vegetable shortening
2 cups water
2 cups sultana raisins
2 cups seeded raisins
1 teaspoon salt
2 teaspoons powdered cinnamon
1 teaspoon powdered cloves
? teaspoon powdered mace
? teaspoon grated nutmeg
2 teaspoons baking soda
4 cups flour
1 teaspoon baking powder
1? cups chopped nut meats
3 tablespoons warm water
Instructions
Put vegetable shortening into saucepan, add sugar, water, raisins, salt, and spices, and boil three minutes.
Cool, and when cold add flour, baking powder, soda dissolved in warm water and nut meats.
Mix and turn into vegetable shorteninged and floured cake tin and bake in slow oven one and a half hours.
Sufficient for one medium-sized cake.




CHOCOLATE RUM CAKE
(Serves 12)

Ingredients

Main Cake
1 cup puréed firm silken tofu
1 cup maple syrup or honey
1/2 cup brewed espresso or strong coffee
1/4 cup ice-cold water
1/4 cup dark rum
1 tsp. vanilla extract
1 1/4 cups whole wheat pastry flour
1 cup unsweetened cocoa powder
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. ground cinnamon
Chocolate curls to garnish (optional)

Rum Syrup
1/4 cup maple syrup, honey or barley malt syrup
1/4 cup brewed espresso or strong coffee
3 Tbs. dark rum

Chocolate Rum Frosting
10.5 oz. extra-firm silken tofu
2 Tbs. dark rum
1 tsp. vanilla extract
6 oz. dark chocolate, melted and cooled slightly

Method

1. Preheat oven to 350F. Grease two 8-inch round cake pans. (J used a bundt pan) Dust with flour, shaking out excess.

2. In large bowl, whisk together tofu, maple syrup, espresso, water, rum and vanilla until smooth.

3. In another large bowl, sift together flour, cocoa, baking powder, baking soda and cinnamon. Add flour mixture to tofu mixture and mix until smooth. Divide batter between prepared pans.

4. Bake until cakes are springy to the touch, about 15 minutes. Cool in pans on wire racks 10 minutes. Turn cakes out onto racks to cool completely.

5. Make rum syrup: In small saucepan, stir together all ingredients. Heat over low heat 3 minutes. Using pastry brush, spread warm syrup over top of cakes.

6. Make frosting: In blender or food processor, combine all ingredients until smooth. Place 1 cake layer on serving plate. Spread with half the frosting. Top with second layer. Spread top and sides with remaining frosting. Garnish with chocolate curls if desired.




Fruity Eggless Cake
1 Cup grated mixed fruits / 1 Cup mashed banana with little lime juice
? 1 Cup water
? 1 Cup sugar
? 2 Cups self-rising flour
? 1/4 Cup milk
? 125 gms Butter
? 1 tsp Soda bicarbonate
? Vanilla essence


Cooking Instructions:
? Heat water, sugar and butter together till the butter melts.
? Let the above mixture cool completely.
? Add soda bicarbonate to mixture.
? Mix flour, fruit and milk in a bowl.
? Mix both the mixtures.
? Add Vanilla essence according to the amount of cake.
? Pour the whole batter into a greased pan.
? Bake it at 350 for one hour.
? Eggless cake is ready.



Chocolate Applesauce Cake (Eggless)

1 1/2 cups sifted flour

3/4 cup sugar

1/4 cup cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup applesauce

1/2 cup water

1/2 cup oil

1 tablespoon vinegar

1 teaspoon vanilla

Sift flour, sugar, cocoa, soda and salt into mixing bowl. Add remaining ingredients. Stir until dry ingredients are moistened. Pour into a greased 8-inch-square pan.

Bake at 350 degrees until done, 30 to 35 minutes




Eggless maple-syrup pecan cake



Ingredients:

1-1/2 cups cake flour
1 tsp baking powder
3/4 tsp baking soda
6 tbsp caster sugar (superfine sugar)
3 tbsp pure maple syrup
1/2 cup chopped pecans
1/2 cup vegetable oil
Juice of 1/2 lemon (I used lime)
1/2 cup milk
Vanilla sugar for dusting (optional)

Method:

1. Grease and line an 8" square baking pan.

2. Preheat the oven to 180C/350F.

3. Mix the flour, sugar, baking powder, baking soda, salt and pecans thoroughly.

4. Stir in *the remaining ingredients and mix well.

5. Pour into the cake tin and bake for 35 to 40 minutes or until a toothpick inserted in the centre comes out clean.



6. Cool in pan for 5 minutes, then turn out carefully onto a wire rack.

7. Dust with vanilla sugar (optional) while still warm.

8. Serve at room temperature.
