Question:

Know any easy peasy light low fat dressings for pasta which arent tomato based?

I'm hoping to make a low fat pasta with steamed chicken, mushrooms and broccoli. I only wanta light sauce to literally moisten it. low fat....i'd usually just pop on some cream..ouch..any ideas?

Answers:

Pesto sauce! A good supermarket should have the kind in a jar, and some frozen foods sections have little tubs of frozen pesto. Stir some of this into cooked pasta, sprinkle with good-grade Parmesan cheese and 'loosen up' with a smidge of olive oil. I use pesto as an all-purpose no-stick additive to all my cooked pasta dishes--whether I use tomato-based sauces with meat or whatever...start with pesto! Added advantage is that you can keep a pesto'd pasta [once drained, of course] warm without its sticking together while you finish the final touches on the rest of the dinner. A couple of tablespoons of pesto is enuf for a batch of cooked pasta for 4.
