Use a pizza cutter better edges and straighter lines. Or you can cut with a knife just make sure you put what ever your cutting with in flour before cutting. Pinching is the old fashioned way of dong pastry If you like doughy dumplings then pinch if not roll out and cut with pizza cutter in strips.
