Use a good, cheap beer, such as Bush, and add garlic, onions, and any other aromatics you desire. No reason to use anything expensive, as the beer imparts little or no flavor.
Also, after you have grilled the Brat's, you can place them back into the beer bath to keep warm. Unless, they are to be immediately consumed.
