When picking a steak for dinner....?

Last night we had some AWESOME steaks! The thing is, they were the most juicy steaks we'd ever had.

Which brought up an interesting point:

When purchasing the meat from the market, how does one guarantee that the meat will be as tender and juicy every time?

We had sirloin steaks; I have purchased the same cut of meat from the same market previously, and have seasoned it and cooked in exactly the same fashion every time, but for some reason, last night they were phenomenal!

If anyone has suggestions on how to choose the steaks so they are consistently juicy, I'd love to hear them!

I know how you feel. I love to bbq. I have had my fair share of great juicy steaks as well as mediocre dry ones as well. Your answer depends on several factors... First, the more cooked your steak is ( rare, med, well) the drier it will be. Also the marbelizing of the steak is important as well. Having just enough fat marbelizing in the meat itself will help to keep juiciness. Also, how thick do you like your steaks? The thicker steaks generally require more grilling time and therefore are more apt to dry out. Lastly, I like to marinade my steaks for hours, the longer time you have, the more marinade will soak into the meat. Hope this answers your question
